Height Of Arrows Funk Gin

It’s a common practice to ferment juniper in the Balkans for the purpose of making a lemonade substitute.

This lovely refreshing Smreka inspired the team at Holyrood Distillery to use fermented juniper to create Funk. Made by naturally fermenting juniper in a mixture of sea salt and lemons.

Nose: Bursting with lemon and woody pine.
Palate: Savoury lemon, citrus rind, and fresh pine, with an underlying saltiness adding depth of flavour.
Finish: Beautifully smooth and chewy.
