Lime Peel

Lime peel is a bright, aromatic gin botanical that adds a zesty, citrus-forward character to the spirit. While lemon and orange peels are more commonly associated with gin production, lime peel brings a sharper, slightly more floral citrus profile, making it a valuable ingredient for distillers seeking to enhance freshness and complexity.
The essential oils in lime peel contain high concentrations of limonene and citral, which contribute vibrant, tangy notes that balance the piney, resinous flavours of juniper. Unlike the juice, which can be overly acidic, the peel imparts a more rounded citrus aroma without disrupting the balance of the gin. When distilled, lime peel pairs particularly well with botanicals like coriander, cardamom, and pink peppercorn, enhancing their brightness while adding depth to the overall flavour profile.
Lime peel is often used in both traditional pot distillation and vapour infusion methods to extract its delicate essential oils. It is especially popular in contemporary and New Western-style gins, where distillers focus on fresh, fruit-forward profiles.
In cocktails, gin infused with lime peel shines in classics like the Gimlet, where its crisp citrus notes complement the sharpness of fresh lime juice. It also enhances the complexity of a gin and tonic, adding an extra layer of zesty freshness. As gin continues to evolve, lime peel remains a versatile and exciting botanical, providing a refreshing lift to both the spirit itself and the cocktails it inspires.
