Fresh Lemon Peel

Fresh lemon peel is one of the most widely used citrus botanicals in gin production, prized for its vibrant, clean and aromatic brightness. Unlike dried peel, fresh lemon peel delivers a more vivid and expressive citrus character, contributing zesty top notes that can lift and enliven a gin’s overall profile.
The peel contains essential oils, particularly limonene, which provide intense citrus aroma and flavour. When carefully prepared, fresh peel can introduce lively, tangy and slightly sweet characteristics, often accompanied by subtle floral nuances. Distillers typically avoid including too much of the white pith beneath the peel, as this can introduce unwanted bitterness that may disrupt the balance of the spirit.
Fresh lemon peel can be used in maceration, vapour infusion or as part of a combined botanical approach. Maceration tends to extract deeper citrus oils and can create a fuller, richer flavour, while vapour infusion often produces a lighter, fresher aromatic lift. The choice of lemon variety can also influence the final spirit, with different cultivars offering varying levels of sweetness, acidity and aromatic intensity.
From a stylistic perspective, fresh lemon peel complements juniper particularly well, enhancing its brightness while supporting other botanicals such as coriander seed, angelica root and floral elements.
