Following more than two years of construction, Eden Mill’s purpose-built distillery at Guardbridge became fully operational in 2025, bringing both gin and single malt whisky production back to the St Andrews area after an absence of more than 150 years. Situated on the University of St Andrews’ Eden Campus, the distillery has been designed to combine modern production facilities with a strong emphasis on sustainability, visitor experiences and the revival of local distilling heritage.

The distillery occupies the site of a former paper mill at Guardbridge, close to the mouth of the River Eden, bringing distilling back to an area where it had been absent for more than 150 years.

Designed as a modern destination for both production and tourism, the facility offers immersive gin experiences, tasting rooms, a retail shop and a rooftop cocktail bar overlooking the Eden Estuary and the skyline of St Andrews, which offers panoramic views across the Eden Estuary and the iconic St Andrews skyline.

The distillery combines traditional copper pot distillation with modern engineering to produce Eden Mill’s range of premium gins.

Careful control of botanical extraction and distillation allows the distilling team to create spirits that balance the freshness of juniper with layers of citrus, floral and spice botanicals. Alongside production, the distillery provides opportunities for visitors to learn about the art and science of gin making through guided tours, tastings and interactive experiences.

The distillery has been designed to provide flexibility for recipe development, seasonal releases and limited-edition expressions, reflecting the company’s long-standing commitment to innovation within the premium gin category.

The production facility also incorporates a pair of hand-crafted copper stills manufactured by LH Stainless (LHS) in Speyside. Designed in collaboration with Head Distiller Scott Ferguson, these complement the site’s broader distilling operations and reflect the company’s investment in high-quality Scottish distilling equipment.
