The first copper Distillery in London for nearly 200 years, Sipsmith craft gin of uncompromising quality and character. Public tours on Monday, Weds-Thursday. Being handcrafted from copper allows Prudence and her sisters to create truly sippable spirits, through removing all impurities from the base spirit and botanicals. Prudence’s bespoke design combining a pot with a carter head and a column still makes her incredibly versatile, allowing her to distil all of our spirits – albeit with a cleaning day in between.
The distillery’s opening hours are 9-6pm from Monday-Thursday, and 9-4pm on Fridays, during which they are contactable by phone. They are closed at the weekend. Due to high demand for their Distillery tours and the health and safety parameters around a working gin distillery, unfortunately you have to prebook. If there is a particular tour that is sold out that you wish to attend, please do get in touch and they will do their best to accommodate you on a Distillery tour.

Prudence
Every curve of Sipsmith’s first still, Prudence, was designed by us with the help of Germany’s oldest still producers, Christian Carl – a small, family business who’ve been crafting stills since 1869. She is completely unique and the only one like this in the world.
Prudence was named somewhat ironically; while our then Prime Minister Gordon Brown was warning a recession-hit UK to become financially ‘prudent,’ Sam and Fairfax were busy selling their houses to fund her creation.

Patience
Patience started life as a rather smart maceration tank, but after 6 months of patiently waiting, we moved to our new, and slightly larger home in Chiswick, where she was fitted with her full headgear allowing her to fulfil her distilling potential.

Constance
Constance is use solely for the production of Sipsmith’s classic London Dry Gin, she is our rock of continuity and is their largest still with a capacity of 1500 Litres.

Verity
Verity is the same size as Constance and, after Prudence, the most versatile still at Sipsmith. Thanks to its vapour chamber

Cygnet
Like the three other stills, Cygnet was made especially for Sipsmith by the Carl family.
She weighs in at a 50-litre capacity, and she’s as close to a miniature replica of Prudence as possible, with a few small additions. She’s fitted with a ball helmet, which compresses her capacity to as little as 10 litres, allowing the team to make exciting and experimental small batches. She’s also outfitted with an interior shelf in the pot, which lets them vapour-infuse all manner of botanicals. And She is also electrical, which means more heat control on a smaller scale.
