Papa Salt Coastal Gin

Born from friendship and a shared love of gin, Papa Salt Coastal Gin is the brainchild of five friends – among them actor Margot Robbie, her husband Tom Ackerley, and producer Josey McNamara, who set out with a deceptively simple brief: create a gin that works with soda, shines with tonic, and makes a mean Martini.

Developed in partnership with Lord Byron Distillery in Byron Bay, Australia, the result is a gin that feels unmistakably of its place. Native Australian wattleseed and pink peppercorn are brightened with zesty wax flower, hibiscus and citrus peel, with an unmistakable minerality from a hint of oyster shell – a nod to the coastal landscape that inspired the brand’s name and spirit.

Fifty-nine recipes and many joy-filled sunny afternoons of tasting later, Papa Salt strikes a balance that few gins manage: complex enough to reward attention, yet relaxed enough to drink without ceremony.

The nose is bright and citrus-forward; the palate layered with herbaceous depth and gentle spice; the finish long and clean, with that distinctive coastal salinity lingering pleasantly.
