The new Kyoto distillery houses 4 main stills, the products of which are blended to produce Ki No Bi’s gins.
The Ki No Bi distillery, located in Kyoto Prefecture’s city of Kameoka, is powered without the use of fossil fuels. Its boiler runs on electricity from renewable energy sources including wind, water, solar and geothermal power.
They could have increased the size of the stills but have instead increased the number from 2 to 4 because they believe in maintaining their meticulous distillation process.
They don’t simply combine all the ingredients into one still and press a button, their botanicals are divided into six different flavour groups and distilled separately then blended, producing a distinctive, pure and perfectly balanced gin, with a Japanese accent.
