The Ivory Peacock

The Ivory Peacock is a distinctive New York City cocktail bar with a particular passion for gin. Founded by Karl Finegan in 2022, the bar was created from a belief that gin was an under-appreciated and under-represented spirit in many of the city’s cocktail bars.

Today, The Ivory Peacock is home to a collection of more than 1,200 gins, making it one of the largest gin bars in the world and a destination for both gin enthusiasts and the wider cocktail community.

The bar’s extensive collection reflects Finegan’s commitment to showcasing the breadth and diversity of the gin category, providing guests with the opportunity to explore gins from around the world alongside carefully crafted cocktails.

Karl is also a co-founder of World Gin Week, further reflecting his commitment to promoting gin and bringing greater attention to the category internationally.

Since opening, The Ivory Peacock has established itself as a unique destination within New York’s vibrant drinks scene, combining an extraordinary gin collection with a focus on hospitality, discovery and education.
