Gin Summit 2026

The American Distilling Institute’s Gin Summit returns by popular demand with a half-day, knowledge-packed format.

The summit will feature a range of engaging talks and discussions looking at both the technical and business sides of the gin industry, as well as a gaze into what the future may hold.

10:00 – Gin in 2026 – Keynote Speaker Keli Rivers

Gin Superstar Keli Rivers shares her passion for gin in this keynote speech where she will suggest ways to get people and consumers more excited about gin. Keli has spent decades immersed in the world of gin, working around the world. She helped to curate the collection at the world-famous Whitechapel bar, and was the US brand ambassador for Sipsmith Gin before her current role as Ambassador to the House of Suntory in New York City.

10:20 – Power in the Process: What‘s so special about distilling the “London Dry Gin” way”?- with Sara Sargent of Alpine Distilling

In an era of flavored gins, infused spirits, and post-distillation additions, London Dry remains the most honest and technically demanding expression of gin. This talk explores why botanical-only distillation without added color, sugar, or allergens creates clarity of flavor, stability, and trust.

10:45 – Navy Gin: A Fresh Take with David T Smith

Spirits and cocktail writer David T Smith shares (for the first time) his latest research on Navy Gin (100 British Proof), which promises to shake things up a little, as well as provide some interesting anecdotes that he found along the way.

11:15 – Clear Strategies: Consumer preferences and trends in gin with Reece Sims of Flavor Camp

Reece Sims of Flavor Camp and the Flavor Report will share some of her recent research and experiences engaging with consumers about the juniper spirit. A great way to learn how to engage more effectively with both current and potential customers.

11:40 – Key Considerations When Switching from One Shot to Multi-shot – with Joe Barber from The Portsmouth Distillery

The multi-shot or concentrate process of gin production allows for a still to be used more efficiently by increasing the quantity of botanicals used, creating a highly-flavoured gin that can then be diluted with more neutral alcohol before proofing. Essentially, each run of the still makes you multiple times the amount of gin. In this talk, Joe Barber looks at some of the practical implications of switching to this energy-saving method, including how to develop a recipe or how to adjust an existing one.

12:00 – PANEL – Local & Vocal: How to encourage consumers to appreciate US-made gin

Gin is having a moment and reports of its death are greatly exaggerated, but a lot of the focus seems to be on imported gin from Europe or Australia. So why are these products getting all of the limelight whilst some of our superb US-made gins are overshadowed? An panel of experts will endeavour to explore and even suggest some solutions.
